Novo Fogo Organic Cachaça

Novo Fogo, or "new fire" in Portuguese, is produced in the little town
of Morretes, tucked away in the coastal mountains of Southern Brazil,
bordering the protected Atlantic Rainforest.
Novo Fogo goes to
great lengths to ensure the quality of their product, while still
preserving and protecting the natural resources of the region. The
sugarcane is grown without the use of chemicals or preservatives and
harvested by hand. After the sugarcane is pressed to extract the juice,
the bagasse waste (the dry, fibrous residue remaining after the stalks
are crushed) is reused as fuel for the distillation process. The juice
is fermented with organic corn and rice, then distilled in small copper
pot stills heated by the bagasse fuel. Like most craft distillers, Novo
Fogo only keeps the heart of the distillate and separates the inferior
heads and tails. However, instead of discarding them, the team at Novo
Fogo uses them as fuel for their cars. Even the bottles are handcrafted
from glass which has been collected and recycled from the streets of the
neighboring city of Curitiba. The distillery reuses every byproduct
they create, resulting in zero waste. This strict production method has
allowed Novo Fogo Cachaça to be certified organic by the USDA.
Novo Fogo Organic Silver Cachaça is a smooth, sippable spirit with fresh aromas of banana, lime blossom and tropical fruit. Flavors of citrus fruit, sweet red pepper and sea salt emerge on the palate and merge with a distinctive note of fresh cane on the finish.
